This coffee was produced by Javier Mendez in collaboration with Cafeologia, Cafeologia began operations in 2010, collaborating on numerous specialty coffee projects—primarily in the state of Chiapas, Mexico.

Since then, they have diversified our activities by participating in projects alongside coffee growers, processors, roasters, cuppers, baristas, and marketers of differentiated coffees.

Shared knowledge is the cornerstone of their daily work. Their mission is to raise awareness of coffee cultivation, empower growers with knowledge, and ensure that effective collaboration among professionals across the coffee value chain becomes a daily reality.
